Goyon-Chazeau

Goyon-Chazeau is a family cutlery workshop based in La Monnerie-le-Montel, within the Thiers region of France. Thiers has been the centre of French cutlery production for centuries, and the workshop has operated there for three generations. It is woman-founded and woman-run, and the work that happens there, forging, grinding, riveting, finishing, is done almost entirely by hand. Each knife leaves the workshop having been touched by the people who made it at every stage.

Materials and Craft

The Tradi collection uses Sandvik 14C28N cryo-hardened stainless steel, processed to 56-58 HRC for edge retention that does not require frequent maintenance. Full-tang construction with hand-set rivets runs through handles of French olive, walnut, or ebony with sapwood, each shaped from natural wood and each therefore distinct. No two handles look exactly alike.

The Audacieuse kitchen knife collection follows the same workshop approach in a more contemporary blade format. The Brasserie steak knife collection uses X46Cr13 stainless steel with a satin finish, full-tang construction, and three hand-set rivets, available in Paperstone composite and natural wood handles. Every blade across all three collections is free of coatings and synthetic finishes.

Why ASH Carries Them

A third-generation, woman-led workshop making handcrafted knives in the town most associated with French cutlery is a specific thing. Goyon-Chazeau does not scale beyond what the atelier can produce by hand. The natural wood handles mean that each knife is one of a kind in a quiet way, not in a marketing sense, but in the sense that the grain will be different, the tone will be different, and it will change with use. These are materials and methods that ASH is built to carry.

Product Range at ASH

ASH carries three Goyon-Chazeau collections. The Tradi line includes the Petit Tradi (4 inches / 10 cm) and the Grand Tradi (5 inches / 12.7 cm), each available with French olive, walnut, or ebony and sapwood handles. The Audacieuse range covers five kitchen knives: a 12 cm utility knife, a 15 cm and 20 cm chef's knife, a 17 cm santoku, and a 23 cm bread knife. The Brasserie line offers steak knife sets of six in four handle options: Black Paperstone, Sand Paperstone, Olivewood, and Mixed Wood.
