Perceval

Perceval

Atelier Perceval is a cutlery workshop in Thiers, France, producing knives and table tools entirely by hand. Thiers has been France's cutlery capital for centuries, and Perceval works within that tradition with a focus on precision and restraint: a small range of pieces, made well, with materials chosen for their performance over time.

Materials and Craft

The 9.47 steak knife is made from Acier 12C27M Sandvik stainless steel. The blade is 110 mm (4.3 inches) long, the full knife 217 mm (8.5 inches), and it weighs approximately 70 g (2.5 oz), light and precise in the hand. Handles are made from polyacetal, a dense, non-porous material that resists moisture, staining, and warping without any treatment beyond washing. Available in six colours: Ivory, Black, Red, Sky Blue, English Green, and Night Blue.

The Le Sommelier wine opener is built around a six-spiral helical auger in 14C28N cryo-hardened stainless steel, inspired by 19th-century sommelier tools, with handles of Pistachio or Gabon Ebony. Every piece at Atelier Perceval is shaped, finished, and sharpened by hand.

Why ASH Carries Them

The 9.47 is a steak knife designed to be used at the table every day. The polyacetal handle does not require oiling or special care. The blade does not degrade. It is a practical, considered object in a category that is often either disposable or ornamental. The Le Sommelier takes the same approach to a wine tool. Perceval makes a small number of things with high attention to material and method, which is exactly the kind of workshop ASH is interested in supporting.

Product Range at ASH

ASH carries the Perceval 9.47 Steak Knives as a set of six, available in six handle colours: Ivory, Black, Red, Sky Blue, English Green, and Night Blue. The Le Sommelier wine opener is available in two handle materials: Pistachio wood and Gabon Ebony. Both are made entirely by hand in Thiers, France.
